Nothing says comfort food quite like lasagna, but if you’re steering clear from meat after a heavy Christmas dinner, load up on your leftover veggies instead. You can use spinach or kale, eggplants or even capsicum, and definitely, don’t forget the cheese – perfect comfort food! - Seafood pasta salad
The perfect opportunity to use up leftover salad ingredients, toss together salad greens with seafood like prawns, scallops or mussels to create a scrumptious seafood pasta salad. Top off with mayonnaise, capers and herbs for an added elegance to the dish. - Sorbet
If you’re getting tired of plain fruit, why not try your hand at making sorbet? Simply cut up frozen leftover fruit, blend with sugar syrup and store the mixture in the freezer until ready to serve.
